Another love that I have is cooking. I was raised in an italian family and married into another one so I have been around great cooks all of my life. I love taking old recipes and putting a new twist on them - especially since I do not eat meat and haven't years now. I do, however, have a husband who loves to eat meat so I still prepare a mean steak dinner or beef stew whenever the mood strikes.

Here are some of my favorite recipes - I hope you will enjoy making them as well as eating them!

Red Solo Cupcakes!!!
I made these for my Bestie's birthday. The turned out SO cute!! And the best part of it is that they are made with beer!

This is a great recipe although I chose a different frosting recipe and the frosting looks like beer foam!

Ingredients:





  • 1 cup Guinness stout
  • ½ cup unsalted butter
  • 1 tablespoon unsalted butter
  • ¾ cup unsweetened cocoa
  • 2 cups dark brown sugar
  • ¾ cup sour cream
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 2 ½ teaspoons baking soda

    1. Preheat oven to 350°F; butter a muffin tin.
    2. Combine the Guinness and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter. Remove from heat, and whisk in the cocoa and sugar. In a bowl, whisk the sour cream with the eggs and vanilla, then add to the beer mixture. Sift together the flour and baking soda, and fold into the batter. Pour into muffin molds and bake for 25 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from muffin tin, and cool completely on a rack.
    Frosting:
    3-4 cups of confectioner's sugar
    1/2 cup room temp unsalted butter
    2 tbsp Irish Cream Liquor (Bailey's or another version)
    Whisk butter in mixer until fluffy (a few minutes). Slowly add the confectioner's sugar a little at a time while mixing.  Add the Irish Cream until the right texture and add skim milk as needed.

    For the cups I simply stuffed them with newspaper until there was enough room at the top for the cupcake to sit in. These were so cute and went over great! We even got to play the Toby Keith song while we brought them out to the birthday girl!
